The 98mm burrs extract way more than a normal burr (flat or conical) this is why I would suggest you go in a bit shorter ratios (1-2 or close) and a bit lower temp. Based on my test when had the ultra and the evo, and based on my friends who own the ultra and the evo, they settle at 86 group/94 brew boiler for an extraction temp of 90C.
For a niche, or for the Honne that is closer to the niche than the ultra, I would go up in temp, with 90 group and 98 brew boiler for a 94 C brew temp, then based on taste and of course beans adjust to your preference.
The problem with ultra and leva is that both are extraction monsters (I can hit 23-25% with a Niche on the leva using 1-2 ratios) so they tend to over extract giving you a bit of dryness/astringency from lighter roasted beans.
As for the Decent comparison, it will be blown away by the Leva, not only in the texture department but in the sweetness, complexity/layering and even steaming. It’s not even close. The only thing where decent wins is the weight, and maybe the speed to heat up but they lie about the time to heat up for the Decent. The machine displays ready after 3-4 minutes after turning on, but that is for a rushed shot not at optimal temp. The brew temp will drop a lot more if you heat it for 10-15 mins versus 3-4 mins.
