This morning I was enjoying a light roasted (not so much in colour but in development) Café Granja La Esperanza Tres Dragones Natural Colombia . The coffee was twice fermented, the second fermentation over 36 hours. Distinct boozey sherry notes with rasins…not just a suggestion, bet actually tasted of this.
The described flavour notes for the coffee were …Chocolate, Lavender, Tea rose, Cider, Phosphoric, Truffle. Which was complete horse manure….
A very nice coffee though, smelt amazing in the green
