Penance Super simple to make the buffer/hardness bottles.
The SCA recipe is pretty decent. Budapest recipe looks interesting. I found another recipe which is on the Barista Institute website that was used for the Finnish Brewers Cup in 2020.
877 g distilled water
82 g buffer concentrate
41 g hardness concentrate
The buffer and hardness has been swapped from the Barista Hustles own recipe and values rounded most likely for people with scales that go down to 0.1g for ease.
Lots of variation of recipes for sure. You’ll find something that works.
