Are they medium / medium dark ? I think darker beans may produce more fines.
Coffee from Kenya tend to be easily soluble, likely to require a bit of a coarser grind for espresso and may get larger % of fines. I also think processing methods could make a difference.
What are those sift percentages of 30s, 40s and 50s ? The 50s may be on the weaker side.
I have done 10 brews (light and medium light) of 10 different bags each. I am now confident that my grind references are good in my case. Here are the averages so far!
Avg: 8.4% is 9% Kruve 400 & 11.9% is 12% Kruve 400
SD : 0.58% (9% Kruve 400) & 0.68% 12% Kruve 400
I don’t like brewing anything above medium light. 😊
Edit : 9% Kruve 400 is #31 on the Duo and #17 in the case of 12% Kruve 400.
