We all talk about the water we use, and the bean we use. But what about the milk we use? More fat? More protein? What makes the best milk - or as long as it froths, then it will do?

I find homogenised whole milk easiest to texture and tastes sweetest when correctly foamed. I get organic milk because I like to think the organic cows all get some sort of cow-spa experience at the weekend. Do not shatter this dream. Plus have you tried to texture oat milk? As an amateur it’s a living hell.

In Scotland you can buy mossgiel milk which comes non homogenised. Tastes much better than supermarket milk much creamier. But it does cost about £1.20 a pint

Well I did use full fat, but now its raw milk. Not steamed raw but will. Be fine all other milks loaded with suger, milk from milkman make sure cream settled on top your good to go.

@"MediumRoastSteam"#p58723 yes Waitrose have a couple of non-homogenised options. One is a milk from Jersey cows that is the the stuff dreams are made of, but costs the same price as a one-bed flat in London.

MediumRoastSteam I do like milk, but part of me also thinks humans were not originally designed to drink milk as adults. In fact, we humans are the only mammals who drink milk as adults.

It’s mostly true, except for descendents of Northern Europeans. Our ancestors acquired a mutation that allows consumption of milk past the infant stage.

For the Irish, it was their main food group for hundreds of years.

Loonster - yep. I was specifically referring to the mutation. It wasn’t the case, until some of us evolved (mutated) to be able to consume milk.

Vague memories that the ability to eat cheese/butter etc (which were able to be stored) over those cold Northern European winters was a genetic advantage.

I have become lactose intolerant in my dotage.
I was visiting a friend in another city last year and asked if we could stop to pick up some lactose free milk.
His response was, “Dude, I’m Sri Lankan, I’ve been drinking lactose free milk all my life”.
I had made him hundreds of milk coffees over decades and he had never mentioned it.

Seems to be the trend with my family (maternal side) and my sister. However, it’s an intolerance rather than an allergy, so, as long as they don’t go over the tipping point, they are OK. Maybe for your friend, the odd cup of milky coffee now and again was tolerated well by his body.

If having trouble with milk, I would try A2 milk. This is a protein more similar to human milk. (And also what most cows produced before A1 became more widespread).
