The challenge is that some roasters sell loose beans that they then decant into paper coffee bags that are not sealed and do not have a one way valve. Or roast and place in these bags. They may roast great coffee, but the coffee has been staling since the day they roasted.
As for the paper coffee bags that are lined with some kind of film and do have a one way valve, I need to check what the liner is made of, and: a) whether there is any risk of that leaching onto the coffee, and b) is compostable or alternatively recyclable.
I bought some of these lined paper bags for use with coffee beans that I roast (but been so busy dialing in my Decent that I not had time to use my new roasting setup). But I plan to use the bags for resting the coffee only, and then divide into lots, vacuum seal and freeze.
I don’t freeze my coffee in the original bag anyway.
