I’m interested in which aspect/attribute of the coffee, that people make at home, is most important to them.
If you have to pick just one, which would it be (all categories are intended as attributes & positive in nature):
Overall flavour - you might not be able to identify what/why it is that you like in a cup, you just know that it is nice & definitely enjoyable to you, rather than just OK/drinkable. Other aspects may be present but of less importance to you.
Acidity - Ripe fruit flavours, like maybe peach, plum, raspberries, strawberry, pink grapefruit, blood orange etc. Rather than very mouth puckering, tart flavours like gooseberry, sharp citrus, unsweetened passion fruit.
Bitterness - Dry flavours like very dark 90% chocolate, 100% cacao, cocoa, earthy spice, leather, heavily toasted bread, heavily roasted hazlenut etc.
Balance - acidity & bitterness, but in a harmonious mix, both are present, but neither dominate.
Sweetness - the coffee does not need any additional sweetener/sugar added, naturally occurring notes like sugar, caramel, honey, syrup are detectable in the cup.
Clarity - the ability to specifically & easily detect a recognisable flavour, or flavours (whether in the stated notes, or not), without the coffee feeling like a generic mix of say, fruit, or nuts in general.
Texture - the tactile feel of the coffee when you drink it, as opposed to coffee that has a thin, watery feel in the mouth.
