Barjee by the test of kaffeemacher which Jake linked above, Bianca v3 has very good temp stability, only with caveats if you leave the machine idle for too long (the temp drop at 1-2s last second of the shot, which, according to @DavecUK, can be fixed by tuning PID but I usually just pull an empty shot).
I have never had to set my machine to anything more than 96C (and only had to do so with very very light roast). With medium, 93-94 is the right spot so the default setting seems to be pretty accurate to me. If you read the Bianca v3 thread, I wrote that I suspected Lance did something wrong without knowing if he had to set it to 98C. Maybe he messed up the offset setting.
