Looking at the pictures I suspect they use stabilised wood. This is where an epoxy resin is forced through the pores of the wood. Once it sets, it still looks like wood, but is now moisture resistant, more durable, and less prone to warping and cracking. For an espresso machine this seems like a good thing.
Some woods (such as walnut) have a much tighter grain and therefore don’t need to be stabilised.
