WHEN TO END A BREW

I’ve been really enjoying using the 3 cup Chemex recently but just wondered in general how long do people wait before ending a brew.

With the “shorter” brewers , such as the Orea, it seems more obvious and I end the brew when the drips really slow down but with the Chemex and the deeper bed of coffee, it seems like it would drip for ever and I’m leaving it much longer with good results. I can’t help thinking it’s adding more juiciness than bitterness but have no idea really.

I suppose my question would be , is there a point at which the end drips start to have a negative impact or in the grand scheme of things would it make little difference?

I’d just wait 30-40s after visible dry bed. Drips individually only weigh fractions of a mL, so if they reduce to 1 a second, or longer, you may as well call it a day.

You’ll probably cause a few more when pulling the wet filter out.

You could also weigh the carafe on scales (no coffee dose, no filter) to confirm brewed coffee weight and see if weights vary wildly (say 5mL+ per 100mL of coffee produced, for a consistent weight of water in, might be unusual).
