My 2 cents worth. I have been into coffee since before the turn of the Millenium. Like many here, I have been down several rabbit holes, come back up for air then gone down again! Firstly a coffee machine makes coffee in exactly the same way as an oven cooks food. Yes, for your house you could buy a commercial oven costing thousands and have temperature stability and the capability of cooking in it all day (or cook your bought pizza) but do you need that?
The point is all of the skill in coffee or cooking lies with the chef/barista. The machine/oven plays a very small part if your fieldcraft is wrong. You cannot take a stringy tough steak, put it into your mega expensive oven and turn it into a delightful Fillet Mignon!
I have probably had more coffee equipment than anyone on this forum. I have not had a Bianca because they never appealed. For me, the whole paddle thing is pure hyperbole. I have an Elizabeth though. Why?
When my Evo Leva went up to heaven I decided to go back to basics. I thought about a Gaggia Classic but they really are terrible unless you only ever make a single cuppa. I thought about a Sage DB. I have had several over the years but not since Sage altered the pipe joins and removed the need for O rings (which always fail) and replaced them with pressure joints. But that said, Sage still do not have a longevity reputation. So, after talking to one or two I plumped for the Liz. If it breaks it is small and light so I can put it in the box and return it to BB.
When it arrived, after a few days I was in love (and still am) with it. For a home user it does everything I need it to. It has small boilers which are quick to respond. Our forum mentor who is no longer with us, wrote an excellent Elizabeth review

So, if a paddle is really important to you, buy a Bianca……the other thing I have not seen you mention yet is the grinder. Pair a crap grinder with the most expensive coffee machine in the world and you will make crap coffee!
