Opened Foundry’s Yulieth Mora today.
First thing I got was the fruity aroma as a ground — stone fruit, ripe mango, that kind of tropical thing — which always gives me hope.
It’s a medium-bodied, complex coffee, and complex coffees are always a bit of a challenge for me when it comes to picking out clear notes. I seldom get enough clarity in them to find anything especially helpful. The fruity acidity is moderate, more like sweet juicy mango, and overall it’s quite a sweet cup.
The finish is unmistakably grapefruit, which is fine, but there’s also a slight bitter aftertaste that isn’t really to my liking. I do wonder whether the yeast fermentation — like anaerobic-style — is responsible for that. It’s tiny, but it’s there.
We brewed the beans at the usual 36g:500g — so 72g/L — at 12% 400 Kruve strength. Maybe weakening the ratio to around 67g/L might help.
First subjective taste score is 7.5/9, losing at least 0.5 for that slight bitter edge. For context, my average score from 200+ bags is about 7.57/9.
