Currently I’m using Foundry Coffee Roasters Diofanor Ruiz, which is a medium roasted naturally processed Colombian coffee. I’ve tried a variety of beans (mostly medium roasts) and they’ve all been nice.
I did play with a Rao blooming style profile for a bit (short preinfusion followed by 30s with no flow and then ramp up the pressure). This did let me grind finer, but I didn’t like the result as much. Unfortunately my tasting skills aren’t good enough to describe what it was about it that I didn’t like as much. From reading around I think this style might be more advantageous for very light roasts.
It’s definitely fun being able to play with pressure profiling though, although you do get the double edged sword of too much choice 🤣. Compared to a flat 9 bar with no preinfusion I almost never get spraying from my bottomless portafilter. I do still get multiple channels and dead spots, but as it never sprays I’m attributing this to fines blocking some of the basket holes rather than channelling.
