After a period of trying to dial in my V60 recipe, logging a lot of data and experimenting, I think the best advice is to take it slow. Make an adjustment and make 10+ brews with it. If you’re still not happy, make another adjustment and repeat. I’ve certainly fallen into the trap before and made adjustments based on one or two brews, which really isn’t enough. Even better, make brews on the same setting with different types of beans.
My setting has been at 47 on the Comandante C40 Red Clix for some time, but I’m currently trying 46, which after four brews is promising. I had a venture up to 48, but it didn’t improve anything.
I’m still happy with the Rombouts papers, but I’ve made some brews with Moccamaster filters on the same recipe, which seems like a good alternative. Not the cheapest filters I can buy, but in bulk or on sale it’s not too bad. At least I don’t have to buy them from another country. My wife also use the filters for her Moccamaster brews, and I can appreciate needing fewer types at all times.
I still got a bunch of the new V60 papers, so maybe I’ll have a go at dialing them in to spend the bags. It probably helps having a recipe I’m happy with for a different paper, giving me a point of reference.
