Pompeyexile Lemon curd and creme freche filled lemon Swiss Roll with poppy seeds. For the sponge:125g caster sugar,125g SRFlour, 3 large eggs, 1tsp poppy seeds, squeeze of lemon juice or dash of lemon extract. For the filling: either just lemon curd or a mix of lemon curd and creme freche or proper cream for the filling.
Pompeyexile I was more than happy as I’ve never made a Swiss Roll before. The filling was a bit runnier than I would have liked so next time I’ll use proper cream and whip it up to be a bit thicker or even use Mascarpone or maybe just the lemon curd on its own. Will be lush with some custard.

Amberale Bread and butter pudding. Half a loaf of sourdough fruit loaf and half a loaf of brioche fruit loaf. 6 eggs with cream, milk and sugar for the custard and half a cup of extra sultanas soaked for a week in Tokay/Topaque. Some fresh nutmeg and cinnamon and a couple of fancy dark sugars. Makes the whole house smell great.
SteveBRS Grilled Mackerel , halfed, left on the bone. Drizzle of lemon , seasalt, grill until blistered. Serve with whatever takes your fancy, rice, bulgur, couscous, potatoes, bread, salad. Leftovers if there are any usually go into a freestyle kedgeree the next day
