You did something correctly in the morning. Did you also adjust the distribution?
IMO, if you distribute the puck outward (a little more at the edges than at the centre), after flat tamping, you can get this. This compensates for the lack of extraction at the edges compared to elsewhere.
If you make the puck distribution absolutely even and tamp, you may not get this doughnut extraction - assuming the distribution in the entire basket is good)
You can test by pulling two shots. One, a good even all around distribution and flat at the top; the second, spread a little more at the edges.
As far as your shot is concerned, your shot time looks ok, unless you did not like the coffee.
