Time= money, specially for italians, try it if you dont believe me. 40-60 sec shot for short ratio, adjust temp for taste.
Espresso in italy is not a demonstration of quality, but something fast, easy that you drink standing up while on the run. Itās like having a short break while using the rest room you take 1 espresso and sip it in 1 or 2 sips, then move on.
You also mention dose, the best dose for dark stuff is a high dose, like 18-22 g and not 15-16 g. The higher dose will emphasis more body and more sweetness without extracting a lot of the burned notes. The reason why they use a low dose is because money, again. Dont take everything you see there as a quality report, they sell to tourist, coffee with sugar, in a fast forward scenery. A friend was recently at Terzi Bologna to get the good italian espresso (he lives in Italy for the last 12 years+) and he had a big disappointment in both espresso he got (this was this summer).
I also was in Italy last summer (Milano, Bologna, Forli, Siena, Pisa, Florence, Venice and some others) and I had much better espresso in some small mountain villages than in the big tourist traps at some āknownā bars. For me, if there are tourists involved and the rating is given by tourists I simply dont go anymore.
My experience with coffee, comes from reading, trying, and engaging with people (in coffee meetings at my place or theirs) while using several machines, including the hated/loved decent espresso but also others. What I say itās not just my findings, but some conclusions people came at after trying and posting stuff over the years.
