Does not sound right at all. Have you adjusted hysteresis and locked the contacts very close to made?
This is a precision instrument and requires fine adjustments only.
I’ve just replaced mine and adjusted as per the video. Sorry I’m no pro at making videos!! Never uploaded one either so hope it actually works!
I used Dave’s suggestion of a not completely blind filter to adjust

Fine tunimg required with actual coffee.
Your method of a chocked shot is similar. But the hysteresis will need a fine tune as it’s going to be different for real coffee dialled in correctly than it is for chocked or blind baskets.
The hysteresis screw needs ⅛ to ⅙ of a turn max per adjustment. You should not be doing full turns.
The pressure set point should be adjusted in ¼ to ⅓ turn max per adjustment. One full turn is around 2 bars differential .
Assuming youre still in trouble we need more info to help you I’m afraid.
Also as Jake mentioned there’s not enough flow at all unless that’s due to the chocked shot being used.
Would be interesting to see your machine with no puck for 15 seconds or so to hear what happens then.
Also @DavecUK , this time I’ve checked the relief valve. Let’s say if it were a marshal amp it would have been on 12 not 11 , as found!!
Gave it a good clean, was quite crusty in there but seal and o ring were in good condition. Gave it a good cote of 111 and reassembled 3 turns. 🤞🏻
