Wow! Hope you arenāt kidding! Unless I am mistaken and not understood this properly, thatās what get flushed out by Evo 2 where ever one chooses to end the shot or end below 6 or 7 bars. I am hearing that some one enjoys drinking that for the first time. I am sorry, I canāt help think how one could drink the lovely espresso from Evo and this considering the below!

BillyG Believe it or not, I do know what Iām doing. This is my third lever machine, 7th espresso machine, 5th grinder, and Iāve been making espresso for decades. I realize that I may not have all of your experience or number of machines ;)
I appreciate all of the advice, but I would prefer to not have to completely change the way I pull my preferred light roast shots.
First, I am sorry if you do not like my replies to yoursā aimed at Jake. Second, can we be a little more kind please? Jeez, it is a coffee forum discussing a cuppa! Third, may we know the levers you had owned please ? Fourth, no one questioned your experience, knowledge or your taste profile. If 5 bars PI is what you like, so be it. It is your money, your machine and your choice. But, please remember folks are only trying to help, considering you just had a new Evo 2. Fifth, unlike other levers, to my knowledge, this lever is a class apart. It is the best and gets the best out of the puck. The extraction and the flavour profile will be different and one may have to re-learn and re-adjust as what worked elsewhere wonāt on the Evo!
