FWIW, the Instagram posts above are from someone in Germany, and posted in January 2020, so V2 at best; if V3 is even faster, then it must be a rocket - no, wait…
From the dual-boiler graph, it seems that the “North American” system of using first one boiler, then the other (to decrease peak current draw on 120V) is also used in the European version, though the European version doesn’t have to worry as much about peak current on 230V machines, so it’s more of an energy-saving feature. I suspect that the fact that Lelit is (was) Italian, and most Italian households have feeble 15A limiters on domestic supply (that’s for the whole house, not a single socket!) has something to do with that, though, as having a 2+ kW pull for more than a few minutes would trigger the limiter in many cases (add a few hundreds of watts for base load of fridges/freezers, routers, lighting… and you are out of headroom).
