Millionaire shortbread Honduras for a few mornings now, it’s now past the 10 day recommended resting period and I’m still getting some bitterness notes in my latte. Not sure what I need to change but I keep comparing everything to Toffee Apple Nicaragua and keep coming back to every time I try something new.

Clodius Trying slacking off the grind ever so. The rationale being to try and extract more and pour slightly faster. That is a single parameter. If that does not work, it might well be the coffee. When I was selecting my favourite I found Chocolate Fondant stood out over all of the rest……..why? No iea!

Clodius You mentioned bitterness, but over-extraction is a specific, smokey, sickly, cloying bitterness. Most causes of bitterness are not related to over-extraction, most commonly they are grinding too fine & getting too much solids in the cup, or even slight under-extraction can be much more bitter than on target extractions (a charred, dry, dull kind of flavour).

You'd have to have a very dark roast, usually, to over-extract at 1:2 range. Medium roasts might need to go way over 1:4 to start hitting over-extraction.

Definitely enjoying the coffees from Scenery, I've been ordering exclusively from them recently as I've been so impressed. Got a Gesha resting from them but they recommend 4 weeks and it wasn't cheap so will wait it out.

This one was a great cup. Heavier in the stone fruit flavour than expected but still very clean and light.

They lied to me. 😁 It’s not 10 days that you need to rest the Millionaire shortbread Honduras, it’s almost 3 weeks now and the bitterness has finally gone away. Finally enjoying it with my usual recipe, 18g in, 30s (8s preinfusion), 92°C and 1:2 ratio output.

Clodius I always found Cworks stuff coming into its own at 3 weeks plus. I used to buy 2 kilos a month on sub and just about had rotation spot n, which is why I find it easiest to drink one main coffee and anything in addition I grind on my Niche!

Coffee Collective - Reshad Honey - Ethiopia

Opened this one this week, just under a month rested.

First Coffee Collective beans I've tried since I was last in Copenhagen 9 years ago.

There's definitely a good coffee hiding in here somewhere but I'm yet to get it dialed in. I've ended up both sides of well extracted on the C40 but none of my efforts have quite tasted balanced.

Enjoyable coffee and definitely notes of softer fruit but sharper than expected. Will persist!

Yeah Sigma, I've been buying quite a bit from there lately.

I'm wondering if it's just too far past roast. I ordered them just after a Scenery Gesha I had that completely transformed after the recommended four week rest so perhaps naively assumed four weeks was a good period in general for very light roasts so ordered this Coffee Collective and one from Helm Indiana, both of which are a month old.

I think I'll stick to buying fresher bags.

I've been hugely impressed with Rave's 'rare' range lately. The Indonesia they sell currently is fantastic.

I'd not bought one of their microlot coffees before but when I got the email last week I thought I'd give it a go. Rested for a week, I tried it this morning.

Accurate notes! Wild flavour. This isn't going to be for everyone and to be honest I enjoyed it more to see the results of such experimental processes than a daily cup. Still recognisable as coffee but with a very intense fruit flavour, not unpleasant at all. This reminds me of when 10% craft IPAs started coming out hopped with NZ/NE/PNW hops and toeing the line of still being recognisable as beer.

Definitely the most interesting experimental process coffee I've had that doesn't involve co-ferments. Looking forward to more cups and future Rave coffees.

Also love the packaging…
