Yeah another vote for the Bianca if it’s being considered now. I’d never encourage anyone to spend beyond their means but if it’s within budget, it currently keeps it’s resale value well so it should be a fairly low risk purchase.
Most of these machines are only as complex as you want them to be. It’s easy to get overwhelmed but at the end of the day, all of them force water through an espresso puck at pressure and some steam milk also.
Without touching the profiling paddle, the Bianca is still a great machine, I barely used profiling the whole time I had one and it was still a fantastic machine I thoroughly enjoyed owning. My daily drinks were similar to yours as my partner and I both enjoy the coffee we can make at home.
The steam power on the Bianca is also great and probably the most user friendly ‘high power’ steam wand out there.
Not that I’d recommend getting into a lazy workflow but the Bianca paddle does help if your grind/dose is a little under and you need to slow a shot down. It’ll also comfortably make back to back shots quicker than you can prep them.
