yes its a guess but it is a fairly well educated one having used the same burr sets in different grinders many times and having blind tasted some too (more of that to come).
Same variables including temperature, humidity, beans, burrs, particle size, espresso profile = same in the cup.
Think I recall a video from Sprometheus who rates his P64 very highly indeed, pretty much saying the same in regard to the espresso from his P64 versus the DF64V.
As a general rule, the higher the price that owners pay for a peice of kit, the more defensive they are about it. Unconscous bias and all that. Who wants to believe that you could have enjoyed the same result in the cup for 60% less cost? Not many.
I have so many grinders coming and going here that I think I’ve developed an objectivity that I certainly would not have had two years ago when I parted with a King’s ransom for an EG-1 (since sold) based on the esteemed Mr Hoffman’s premium grinder showdown series.
Me, I value aesthetics too. And as I point out above, owners report that the P64 is top level design and engineering and I’m sure that an owner can derive great pleasure from that too. And for many, that’s worth an extra grand. No arguement there.
But the idea that it produces a better espresso than another grinder with the same variables as mentioned above is IMHO highly questionable. Its a bit like the wine drinker insisting that their wine tastes better in a Riedel glass.
Humans tend to filter their experiences through what they want to believe.
But live and let live, each to their own, horses for courses and at this point I think I’ve run out of catch phrases so it must be time for another espresso.
