Variable speed grinders

I have no experience at all with these modern phenomena! The only thing I can relate to is the Eureka Mythos. The original grinders all span at around 1350 rpm. The Mythos burrs are 75mm Tin burrs mounted at a 45 degree angle. This means that there is no where for the coffee to go except out of the chute. As things developed, they brought out the Mythos 2 Clima Pro. This was a fixed speed grinder at 900 rpm. Having had several of both, if I was going to buy another, I would definitely buy the faster spin version as the taste was far superior, to my taste buds anyway!

Therefore I find it mildly interesting that the current trend seems to be to go for a slower spin speed. I am quite prepared to be shot down over this but is there any actual data to prove this as opposed to someone saying they simply prefer the taste (as I did)

dfk41 - the grinders you mentioned are hopper fed, rather than single dosing. Dave put a lot of effort in finding the best speed for the Niche grinders, and that’s a much slower speed than anything you mention in your OP.

The beauty of variable speed? You can figure out what you prefer, and whatever works for you with whatever burr set you choose. Power (and choice) to the people! 😉

If you look at the other DF64V grinder, there are a few videos of someone demonstrating the impact of variable speed on taste (the presenter’s taste, of course).

MediumRoastSteam Niche grinders, and that’s a much slower speed than anything you mention in your OP.

500 ish rpm and chamber clearance without a puffer…plus grind times of 20s for 18g….there’s not really many grinders that can do that…especially the grind time. Well there are 2 I know of that can grind fast, but only 1 comes close to matching the Niche on chamber clearance.
