MediumRoastSteam it feels rather strange that you are at “burrs touching” point and your extractions are so short time - wise. You should be able to choke the machine.
I know! I will try to post the puck prep when I pull a shot next time.
It is not often I can’t dial in quickly. My average shot time is in the 25s - 28s range.
I will give some examples.
For this coffee, at 0.5 mark, the first drip appeared in 4s, 1:2 at around 20s and 1:2.5 at around 23s.
I pulled > medium colombian decaf yesterday at the 2 mark. It chocked the machine as 36g shot lasted more than 1:15s; and the first drop did not fall until 20s. The water was still sitting on top of the puck when I had pulled the PFA out. I loosened the grind to 3 and the shot was perfect lasting 30s this evening.
I opened the Smith Street’s White Peak for latte for my wife yesterday morning. I ground at 4, the first few drops fell around 7-8s, and the shot lasted about 32s.
I have seen the Fermentention process bags typically require finer grind settings for my Duo.
I also wonder if the flat on the Evo typically produce a lower shot time shots. It is a shame that for bags like this, I run out of options 😁
