I haven’t tried the 189 burr in the Philos but have extensively used the 189 in the Mini and the similar 33 in the Super Jolly.
I wouldn’t say the med-dark espresso from the I200 burrs is inferior. There’s perhaps slightly more body from the 189 which can be enjoyable for those types of roasts but flavour-wise, I’ve enjoyed some great med roasts from the 200 burr.
Perhaps too many other variables for the above to be a fair comparison but a year or so with the 200 burr I’d say it’s a very solid all-rounder.
Bearing in mind it also covers the roast spectrum well on filter brews too, it’s an exceptional burr. Did I mention one of the biggest selling points of the Philos is getting to use the 200 burr in its native setting. I might’ve mentioned it once or twice 😅
In fact I just now had a fairly dark Brazilian espresso blend from the 200 burr and it was great.
