They very much were used in the third wave shops. They’re still a fairly common sight in a lot of shops, especially outside of big cities.
I lived in London, mainly East London during some of the growth of London’s third wave in the late 00s to mid-10s and I’d guess 99.9% of them used Majors, Roburs or Super Jollys. You’d see the odd Ceado or other brand but up until the mid 10s when the Mythos started becoming commonplace along with the MK E65/E80 it was Mazzer all the way.

Obviously Mazzer burrs are used in a number of other grinders and it was the original grinders they’re taken from that started their popularity.
I’ve never seen a ZM anywhere but I’ve not seen any shops single dosing espresso. I’m sure there are some that use single dose grinders and admittedly I don’t live in London anymore so things might’ve changed. I still just see Mythos/MK on-demand grinders mainly.
