I do the same, except that I go through less coffee. I rest the sealed bag for 7 days then decant into 2 to 3 day portion vacuum packed bags, then place these in a larger labeled ziplock bag (for convenience). Which I then freeze. So my individual bags are about 100 to 120g each (depending upon the dose size that I tend to be doing).
I defrost an individual bag the night before. I open in the AM, use whatever I use and place the balance in a small jar with a flip top lid and gasket. It holds about 40g, so I fill 2 to 3 to the brim. I also have smaller flip top jars that will hold about 20g that I use when I want to prepare a bunch of single doses in advance, such as prior to a dinner event, or if I have a small leftover amount.
The bottom line is that I try to have no more than 2 days (preferably) or at most 3 days (maximum) of beans defrosted at a time. Once it’s defrosted, O2 starts to do its thing. Sealed jars help a little but probably not much, as their is O2 in the jar between the beans. Bean thinking about using argon to displace O2, but that would be too much faff.
