I always dose straight from the freezer. I have whole bags in there and I also decant the bag I am using into glass jars with screw top lids that hold 36g each. The other day I actually had about a quarter of a bag and got distracted and left it out overnight. So, I left it out until I used it up. Can’t say I tasted any difference, but given my inability to flavour profile but go by, if it does not give me a face like a Bulldog chewing a wasp it is fine, then I am not the person you should be taking any advice from.
The reason I freeze all my coffee is convenience, rather than have 5, 6 or even 8 bags sat out on the counter top or in a cupboard.
There are many more clever people on here than me who will no doubt tell you different.
