Flavour balance - was it obviously under extracted, e.g. tangy, slightly fatty/oily mouthfeel? Handy if you can give it a subjective numerical score so we can see any progress.
Dry bed time is from the first drop of water poured to dry bed. So about 1:40 total? (If so, seems too quick).
Your pour rate is the tool you use to get a good extraction at your chosen grind size, so it’s important to know what this is and be consistent.
Longer bloom won’t help, if you’re blooming with 3x dose weight, half your bloom water has dripped through after 40-45s, it’s not doing much after that.
If you are grinding coarse (we don’t have any objective reference of your grind size), a single brewing pour is unlikely to work. Finer grinds can work with fewer pours, coarser grinds need more pulses to slow the average pour rate. E.g. 50g every 30s each pour taking 15-20s, or 33g every 30s. each pour taking 10-15s.
