I’m a musician (mainly just as hobby these days) and it’s a ‘sample library’.
Basically an orchestra (or any instrument) is recorded in solos and ensembles, and then the sounds of each note can be mapped to a (piano) keyboard to compose music on a computer effectively using ‘real’ instrument sounds.
If you ever see those documentaries where film composers are sat at a computer and playing violin sounds with a keyboard talking about how they make music etc, the sounds you’re hearing are sample libraries.
Normally they’ll then go on to record a real orchestra playing the music live, but it’s not uncommon for smaller budget movies/tv shows/video games to just use recordings with the above libraries.
It explains it more here, along with some music examples. It’s very convincing.
