smallblueplanet Do you have a pouring kettle?
If not, unless you have a burning desire to get into a degree of trial & error, the Melitta Aromaboy costs about the same as most non-plastic pour-over cones and can produce about 280ml of brewed coffee, enough for 2 small cups. For larger brews, I use the stock cone with Kalita 101 papers from Ozone, 22g coffee 330g water.
What brand are your travel cone & papers? (?Photo would be handy). If you have a pouring kettle, you could start with these?
Regarding filters and V60, it’s not just a case of different mouthfeel, they greatly affect flavour too, the best option in the UK is probably the Project Waterfall (Dutch Filtropa) papers from Hario. I use Rombouts white, Melitta style filters, folded to fit the V60. Mouthfeel will always be thinner with pour-over compared to espresso, you are making a drink a seventh of the strength of espresso.
V60 is just a drip cone, it works well enough, not necessarily any better/worse than other established options (I can’t speak for the plethora of recently issued new brewers). It’s advantage is more that it’s very popular so easier to sanity check/get feedback from other users.
Generally, I prefer to make multiple smaller cups, rather than big brews.
Scales for weighing coffee dose & brew water are essential, as is a timer. You make drip/pour over coffee by synchronising your brew water pour rate and grind size (not by total brew time).
