Supplies of the Finca Toño are running low, so that night not be the best option, so I’d recommend the Finca Matilde Yeast inoculation maybe? - these are interesting coffees for anyone that hasn’t tried them. Yeast is added to the ferment, which doesn’t really impart flavour, but has an impact on which microbes thrive (or don’t) during the fermentation, and that does have an impact on flavour.
