dfk41 No, but you and Patrick have as well as a few other people and I trust your judgment. I also believe in science., as to why something should/shouldn’t work well. It’s what I have based the last 18 years on when helping manufacturers develop machines. It has not let me down yet.
The Evo tells me lots about what’s happening and has clear design physics around it…I prefer that over a machine that tells me nothing, and find it off-putting when I read claims that have no basis in fact or physics.
The evo physics/facts reassures me:
- The group temperature (confirmed by my own probes around the active area of the group)
- allows me to change the temperature to whatever I want
- shows me both boiler temperatures, and group temperature in real time using 3 accurate and separate PID loops
- divorces brewing from steaming (which has to be a great thing)
- warms up in 15 minutes (no gymnastics needed)
- allows me to run with the steam boiler off
- uses a group costing 2x as much and of high quality
- actively heated group, no inaccuracies of thermosyphon or dipper)
- shows me what’s happening during the shot (pressure gauge, allows feedback to manipulate the lever and obviates the need for scales
These are all facts and physics that is indisputable in improving the operation of a lever machine and bring it properly into the 21st century, without sacrificing the basic heart of the machine. Better shot performance, better steam performance, better science…..all at a very fair price!
