i like both machines, they are very different from each other
i prefer the work flow of the evo in terms of :
they are consistent in the shot, super repeatable, the clean up is much less than an e61, the pucks knock out super dry/hard, quick group flush done,
the Bianca you have to flush the group, i back flush with water and the blank disc after i finish, pucks can be soggy/semi hard depending on screen used.
im using the same amount of water though
in terms of shots :
the evo is super consistent, no scales needed you know what you are getting, to the point it almost gets kinda boring, once you master basket prep you can get thick gooey shots, or cleaner brighter light shots, the temp is more stable than the Bianca.
the Bianca opens up a whole world of different baskets and brewing types from long infusions to turbo shots, the pullman basket im really liking atm for longer shots 20g/50g,
i use a declining profile on the mrs brazillian beans, but on mine im doing all sorts haha, the machine has the capability for 4bars low flow and also a stopped pre infusion, they cannot mimic a lever though, the evo pushes so much water through the group think stream vs Niagara falls.
steaming, both steam great, the evo slightly wetter when perging but its very marginal, id guess the mantis arms cause that.
in terms of baskets, the evo i used the ims competition, for the mrs beans the grind 20 on the zero and dose 17g has stayed the same, however for my lighter stuff, esp in the pullman ive gone from 6 down to 4.5 on the duo and up from 17.5 to 20g
end of the day they both make great coffee, just go about it in a different way,
