The same C & C Ethiopian was better than yesterday. Loosened the grind by 4 micro clicks, took the kettle
off at around 99C, 15g, 225g water, and 45g every 40s; and, thanks to MWJB, first 2 at direct and 3 with strainer in circles. Total time was 3:20s.
It isn’t smoother still and not bitter but somewhat harsher to drink. You get the orange acidity and notes. I score at 6/9. I am thinking if the 2 centre pours agitated the bed yielding a harsher taste! Perhaps, I will strike a middle ground of the last days’ grind size and use the strainer from the start and see.
l like the current strength of the brew though!
