I pulled a very odd shot this morning from my Bianca - was delicious, but not sure I could ever manage it again:
I have my bianca on a homekit style wifi plug, and it comes on at 7 for an hour, allowing me to make a flat white as I leave the house, then turns off - this morning I was obviously running a little late, because the machine turned off halfway through the shot - I had preinfused using the paddle and ramped up to 9bar - 20.5g in the basket, and the machine switched off at 21g into the cup - the pump switched off, but the remaining pressure in the machine kept pushing it through - stopped at exactly 41g into the cup, as it very slowly rolled to 0bar.
Now, admittedly, I cut it with milk, as per my normal routine, but it was delicious - not sure whether this was bias due to the surprise at the method of delivery, or I’ve stumbled onto something, but I’m not sure with the paddle i could achieve such an even ramping down of pressure to the end of the shot… anyway, luck is a wonderful thing, and just thought I’d share my story!
