Pompeyexile With pleasure. My cheat is to use 2 × 150 gms of good quality dark chocolate for melting, then to sprinkle in a 100 gm bag of whatever type of chocolate chips you fancy. Sometimes I use milk, sometimes dark. When you add the melted chocolate to the mix tip then in them. I use the food mixer for the whole process rather than reverting to hand. If the oven is nice and hot then 30 to 35 is accurate. Just trust your nose as if you put a skewer in the chances are you will hit chocolate! It does not want to dry out on top and a nice wobble is good. After cooling I keep it in the fridge where it will stay for up to a week but the hard part is not to have a piece everytime you take the milk out! I have made this probably hundreds of times! Attached is a picture of the cooks effort (not enough chocolate!)

Ingredients
1. You will need a brownie tin, about 23cm x 23cm, lined with baking paper.Set the oven at 180°C/Gas 4.
2. Put the sugar and butter into the bowl of a food mixer and beat for several minutes till white and fluffy.
3. Meanwhile, break the chocolate into pieces, set 50g of it aside and melt the rest in a bowl suspended over, but not touching, a pan of simmering water.
4. As soon as the chocolate has melted remove it from the heat.
5. Chop the remaining 50g into small pieces.
6. Break the eggs into a small bowl and beat them lightly.
7. Sift together the flour, cocoa and baking powder and mix in a pinch of salt.
8. With the food mixer running slowly, introduce the beaten egg a little at a time, speeding up in between additions.
9. Remove the bowl from the mixer to the work surface, then mix in the melted and the chopped chocolate with a large metal spoon.
10. Lastly, fold in the flour and cocoa, gently and firmly, without knocking any of the air out.
11. Scrape the mixture into the prepared cake tin, smooth the top and bake for 30-35minutes.
12. The top will have risen slightly and the cake will appear slightly softer in the middle than around the edges.
13. Pierce the centre of the cake with a fork - it should come out sticky, but not with raw mixture attached to it
14. .It is worth remembering that it will solidify a little on cooling, so if it appears a bit wet, don’t worry.
