Sorry about this, but this is the only way I could get the recipe on here. I did speak to Dave about trying to put it on as a PDF, but that was not possible or even as a link to my One Drive, but I am totally hopeless when it comes to computers and after an hour of trying that including looking at YouTube videos of how to, I had to give up.
I could have added a link to Richard Bertinet’s original recipe, but that did not include the home-made marzipan, plus there were no pictures for the folding method (I screen grabbed those off the YouTube video).
The amounts for the frangipane quoted does produce a lot which is why I think it could be halved even if baking two larger Stollen, as you do not need a lot because too much and it would leak out.
As with any recipe, if you want to tweak it like adding different fruits (cranberries?) or different flavoured spices, then why not. That is what cooking is all about. Using a basic recipe and making it your own.
