The niche zero is already used from some time by Gardelli on italy with the Marzocco leva X.

Since i have the EVO + NicheZero i use 8°C temperature differenece with medium roast beans. I haven’t yet tested light roast but I’ll do it soon.

I have a niche, BW and ssp df64 brewing burrs both aligned by me. I tried all temp settings and roast degrees to stuff like super super light that made the niche stall one time…. Furthermore i Manipulated the lever to do 6 bar shots,,, fast flowing almost like a turbo shot. I have put a lot of effort on improving my puck prep across the years.

Now why i mention this?

Simply because many people ask what is the optimal, and really i think the question should be what is the optimal for me and what I actually like! For example for milk I pull short ratio with longer time and the tradeoff is a i get less clarity but nice texture with milk… for lighter stuff i pull longer and I know i am compensating body for clarity. Thought this is lessened on my BW. Again, its oki to like what you like. My best advice is don’t confuse yourself with chasing nothing… how? This happens by unrealistic expectations AND by doing 100 things in one time. Temp set it for a week and let be … water don’t change it everyday… pre infusion don’t change duration for every shot. Whatever decision you make have a logic behind don’t just do it because people are doing it or because someone said so….

For pourover, most currently believe that light roasts as they are more difficult to extract need a higher temperature than darker roasts. For filter this is what I also find. For some time amongst virtually all in coffee used this same principle for espresso. Recently some on the German forum and other forums , although the same posters, came to the conclusion, based on their own taste tests, that the opposite is best - that is to say lower temp for light roasts, higher for darker. Not sure of the science behind these conclusions though. I’m with @Berryterry , try it but go with your own taste buds and what you like. Personally I still prefer a lower temp but faster flow, easy to do on the Decent, but still possible with grind size on the Evo.

Let’s thank the built-in camera!

It is the Ethiopian Haru. I only had one shot on the Evo. The temp settings are 94/100. Dosed 18g, got 40g at 6.75 - pulled a little earlier than at 6.5 - bars and the shot lasted 39s. I still need to tweak.

Looking at the way it beads, the distribution can be improved which was consistent with traces of black patches on one side of the puck. I was happy with the shot overall, although I can’t say I like the bag.

The NZ is an obvious choice for every one. It is great at a very attractive price point. It is perhaps enough for my purpose, tbh. I have a conical, though manual but very good. It gives a very good cup, although the Evo is perhaps exposing its’ limitations as it can lack a clarity of notes in the case of a light or a medium light roast. Example - Pineapple and peach on a Kenyan light roast.

I am open to going an electrical single doser. I’m not confident that the NZ is going to make a significant upgrade difference to our cup as it is another conical. If I am forced tomorrow, I would buy the NZ only for convenience.

We make 6 cups a day; 4 espresso with/without milk; and, 2 are brews — either a Clever or V60. I’m not missing the electrical yet, although I do have a good mix of light to medium dark.

I think I like the idea of a flat electrical single dose than the conical. We are happy to wait.

Have you timed your shot?
How does it taste? If you and your wife like them, I won’t bother. This is what matters.
When I open a new bag, if the timer shows up to 45s, I won’t bother unless I don’t like the shot or notice silts.
I pulled another shot this evening, exactly the same pour and time. On both occasions, I saw a tiny bit of silts into the cup. I may grind a little coarser tomorrow.
I don’t like doughnut extractions or beads on the screen taking too long (>10s).

You may be tamping too hard. Take a look at your distribution. I don’t think the screen or the basket matters. The Evo is forgiving. You don’t have to tamp harder.

We always use the IMS screen and the basket - for dosage reasons. I will swap the screen to stock and post the outcome. I think you are using the stock screen. Try the stock basket and the IMS screen, if you like. If you don’t have the IMS screen, I won’t bother. It doesn’t do anything to the cup.
