As deduced above by dfk41, my previous lever was an R24. Without being able to have as much control with that machine, I found my best espresso with a prefinfusion at 5bar.

I am learning and willing to experiment with all of the new variables now available to me. Unfortunately, I get up very early for work during the week so I won’t get to play much until the next week end. I lowered the preinfusion to 3 for tomorrow’s pull!

You are going to find this machine is in a different league to the LR24.

Pressure profiles are very different with the pressure not dropping off massively in the later portions of the shot
You actually know what pressures and when, you can see it
Temperature management is not only excellent, but visible , very controllable and consistent

Things are not hidden from you, independent heaters ensure each system is separate and steaming/brewing don’t affect each other. No thermosyphon locks, fast warmup etc..

One of the biggest things though is preinfusion. It’s all Londinium had, so they gave it mythical properties:

It massively changes the flavour of the shot - how?
you can change the temperature of a shot - how??? and if it was possible which it’s not, what to from what?

A lot of the issues around preinfusion was because Londiniums profile loses so much pressure so quickly during the shot. Anything above 3 bar, really isn’t preinfusion and if it’s flavour you want, the LSM lever profile and group gives you that in spades. In fact Reiss and his supporters created many myths about the machine.

To me it’s a mystery why a machine like the LR24 costs as much as an Evo2, when it has a significantly lower build cost. Even the lever group used costs around 50% of what the ACS group costs.

So to extend the car analogy, you were driving a family hatchback offroad in wet weather and had to drive it a certain way. Now you have a proper 4×4 and can drive where and as you should be able to. Lower your PI down to 2 bar, try and work from around 2-3 bar for best results. Use the temperature capabilities to begin to bring life to your shots and trust the excellent profile and deeper pucks of the LSM clone groups..

You’re welcome! I highly recommend the cups with a matte finish on the outside. That is what you see on top of my machine.

No worries, we can share ;) I would like to get one of her Jupiter series someday. I have to say that her cups are my absolute favorite of all the cups I’ve ever had.

Thanks for the advice! And yes, I am doing more experimenting with different settings, and things are working much better and tasting delicious! Plus it looks fantastic on my counter!

I hate to disparage any product, but yes, I am very pleased to be in possession of the Evo now!!!

I changed my group and brew temps as @Cuprajake suggested. Based on @dfk41 deducing my R24 experience, and having only grind and preinfusion as variables with that machine, lowered my preinfusion to 3bar this morning. With the dosing system set to manual, I pulled two amazing shots today, without any issues! As a matter of fact I have a single origin Kenyan flowing into my brain as I type, which was the best shot I’ve made in as long as I can remember. I can’t wait to experiment even more!

As I stated above, I hate to disparage any machine or anyone, but I’m very happy having moved on from my previous machine.

Oh, @Paolo_Cortese , please don’t pursue further programming of the dosing system due to my errors. I appreciate the gesture, and apologize for creating more work for you. Your and Dave’s Evo is a dream!

ACS 32 or IMS competition B662Th32M that is the Question ☕

Anyone know technically what’s the difference in hole pattern, size, area etc.

I know the ACS is ridged 😎

Since posting the other week I was dosing 21g in the 26 basket and getting good pucks, easy to knock out etc I’ve been using the IMS 32 with 22g. 21g was like slush after the shot.

I’ve never used the ACS basket, until just now. mainly because the ims is noisy to knock out i thought I’d try the ridged ACS

Using the 54.4 tamper from blue star (verniers in the van,!) I see the ACS is marginally smaller diameter and a near perfect fit to the tamper. Verified by slightly less headspace after tamping.

The shot ran maybe 3 to 5 seconds longer than the IMS ending at 33s

Quieter and easier to knock out as its held more rigidly in the handle.

Nice latte, pretty much as expected without comparing to anything.

All based on one shot only.

Any thoughts appreciated.

So to me it’s looking like a win for the ACS basket.

Adrianmsmith what ratio do you aim for when using 22 grams? Interesting to see the different approaches. I saw Dave’s videos on using a shallower basket and dosing maybe 17 grams which made me thing of buying a 26mm deep basket.

Currently I dose 18,5 grams and aim for about 45-50 out. But you can imagine the puck is soupy as hell with the standard basket.

Fit of the acs tamper is great though.

DavecUK yeah, I saw the series of videos you made. They we’re really insightful which made me think of buying a shallower basket.

You mentioned you preferred dosing around 17 grams and that it works best for the LSM group. Could you clarify why that is?

Blackbirdman I prefer dosing 14-16g in a 26mm deep basket. If I’m using the 1.7mm sintered screen I dose 14g.

Hello all - two quick questions. For reference my machine is probably early 2023 (I bought used)

I get some water coming out of the steam wand upon first steam of the day (maybe a few 10s of mLs - I could measure if it’s important), and even a few spritzes after it’s all warmed up. Reading through some posts there is talk of the anti vac line sitting too deep in the water chamber causing this. I could see this being the case with mine. I also see posts that it should be routed to the drip tray fitting. Should I attempt this reroute myself or is cutting the tube the recommended solution?
I get maybe 5-7 seconds of low pressure steam coming from the wand after turning off the steam. I assume this is not expected if the machine is in good working order right? If so I expect to follow the procedure in the video by @DavecUK which looks simple enough.
Does anybody have a list of o ring sizes for this machine anywhere? If not I would be happy to start collecting and add to the collective faq.

Bump on these questions - has anybody rerouted the third tube from the tank to the drip tray, or is this not recommended and I should just shorten it?

So, I had my first lever incident today. Only took two weeks of ownership for me to be clumsy enough 😀

I was distracted, only pulled the lever until slightly above the bite point, let go (thinking that I pulled it down completely), and BOOM. That thing really packs a punch, the drip tray cover (and my cup) flew off to the side from the force of the lever impacting at the top.

The machine, as far as I can tell, is working normally. I can’t find any leaks or any other behaviour that would lead me to believe that it was damaged - but just to be sure, would you guys recommend opening it up and checking, and if so, which areas specifically?

It’s probably finem the case is a lot more solid now, so I doubt there has been any pipe fracture. it’s also worth noting that the safety system won’t save you from this as the group probably isn’t full enough.
