Ethiopia - Rocko Mountain natural from @LeefromFoundryCR .
First, the regret - I only gave it a week rest. I think this bag would benefit a lot from resting another. I intend leaving it to rest for a week in the original bag. I will be travelling early am tomorrow for the rest of the week and I will not be tempted to use the beans until the end of the week.
Second, tomorrow, I will make a flat white and give it to my wife and see what she thinks of it as a go to cup for the next 2-3 months. She likes Ethiopian coffee. The last one was from Blackcat (Natural Ethiopia Yiragacheffe Beloya).
Third, like Blackcat, these guys do not disappoint. It is a nice coffee. The ground coffee smelled awesome - full of intense fruit flavour. The espresso straightaway gave me floral / fruity aroma. As an Americano, the cup was smooth, gentle, light and had a pleasing acidity and sweetness as in Strawberry. There were no blackcurrant notes. I often find strawberries not leaving a lingering after taste. The black coffee was just that.
Four, I may have to up dose by another 0.5g - 1.0g from the current 17g, 40.3g out cutting at 7 bars and the total shot lasting 44s. The brew temperatures were 91C on the group and 97C on the boiler. The coffee was a little on the lighter side for me.
