DF83 - first impressions

Update on my DF83 experience — today I took my DF83 apart to clean the insides, and to get a look as to what was going on with the declumper and the exit chute.

The area where the burrs are spinning was remarkably clean. The only coffee here was the small amount stuck in the teeth of the burrs, and in the “+” of the screws that hold the burrs in place.
There was a small amount of ground coffee stuck to the declumper and the beginning of the exit chute, but given the amount of work I needed to clean those parts up, I can’t see that this would result in any exchange to a significant degree. The total amount of coffee I got off the exit chute was 0.2 g. The amount of coffee stuck in the declumper was negligible.
I still need to get some beeswax to do @tompoland’s tip of waxing the exit chute.
It took me a few rounds of reassembling the DF83 and taking it apart and reassembling again before I was ready to use it. These were all self-inflicted wounds, and not a fault of the DF83. What was remarkable is that after all that, the zero point was still pretty much where it was before I took apart my DF83 for cleaning. I think that says something about the build quality of this grinder.

I wouldn’t expect this to have changed. The lower burr did not move, and the top burr is fixed to to the collar which has a very fine thread and is screwed in to the burr chamber. So there was nothing moved there. 👍 - the only possibility of not going back to the exact same zero point is if you had removed the burrs from their mounting points or refitted the lower burr carrier, which I believe you did not.

Knowing something about threaded adjustment mechanisms, getting the thread just right so that there’s no slop, which would have made the zero point move, but still allowing easy adjustment is no small feat. So props to the DF83 team!

tompoland Hi Tom, apologies for bringing back up a slightly old comment but having recently purchased a DF83 I am curious about the beeswax. The metal funnel supplied with the DF83 tends to build up a ring of coffee around the inside. I also have a tamper that slowly builds up fine coffee dust after a few tamps and so I was curious whether you think beeswax could solve these two issues?

KyleT Every new grinder will spray more static induced coffee grinds around initially, so bear that in mind.

I’m not entirely sure what what the funnel part is that you’re referencing but if it’s a chute (or any other suface that grinds pass over) then beeswax will probably work well. I used beeswax on the Honne (the static Queen of grinders) and it stopped the static induced grinds from clinging to the chute almost entirely. It really made a very significant difference. The trick is of course to make sure it’s make sure it’s nice and dry nice and dry before you grind.

tompoland I worded it badly, it’s a metal dosing ring that is supplied with the grinder. I’ve ordered some beeswax so I’ll give it a try. I was hoping to wax the chute on the df83 too but it doesn’t seem to separate (like a Mignon grinder does) as my chute was clogged for the first time today.

For those of you guys who bought the df83 and had a df64, what do you think concerning whether there was a big enough difference between them? I would expect the df83 to be better but if it is just a small incremental difference, then it may not be worthwhile to check out for me as a user of the df64. I appreciate that what is incremental and what is dramatic improvement may differ from user to user, but it would be useful for me to learn what those with personal knowledge of both grinders with analogous burr sets (i.e. italmill burrs vs italmill burrs or ssp burrs vs ssp burrs) think.

chlorox I was interested in the answer to your question but looks like no one has had both.

FWIW if the burr geometry is the same then it’s very unlikely that simply having a larger burr will make any discernible difference in the cup.

The manufacturers talk about a larger sized burr (with the same geometry) giving more uniformity but I’ve never been able to pick the difference up in the cup. Larger burrs do however give a faster grind time (assuming that the motor is commensurately more powerful) but that’s not normally something that’s critical in a home environment.

I’ve only had two grinders, a Baratza Virtuoso+ and the DF83. I really enjoyed the espresso I made with the Virtuoso+.

The main benefits I see from moving from the Virtuoso+ to the DF83 are:

Grinds so much faster.
Stepless adjustment.

In terms of taste, I was able to figure out how to tweak the DF83 settings and some other aspect of my workflow so that the espresso I get with the DF83 matches what I used to get out of the Virtuoso+.

What this says to me is that if I, who I consider still to be a relative newbie to the world of espresso-making, can get similar espressos from a 40mm conical grinder and an 83mm flat burr grinder, then whatever difference there may be in taste between a DF64 and a DF83 is probably going to be minimal.

My 83mm SSP burrs ground quicker that the mazzer stock 83mm, different geometry to, the SSP lent themselves to bright Coffee bring forward that acidity, and more sweetness

Fwiw I’ve noticed a difference going from mignon 50-55, to zenith 64mm to the mazzer.

Thought I’ll post a little update.

I tend to clean my grinders every month or so but decided to leave it longer to see what will be the result. So it’s been just over 13 weeks since last clean and estimate around 3kg through it.

It retained 4.6g out although most likely 1 gram more as even though I was trying to get it all to the container there’s no way I got it all.

It’s no where near Niche yet I believe not a bad result for a 83mm flat burr.

Overall very pleased with it!

tompoland It was mainly playing around with the grind until I got what I wanted. This also resulted in my typical extractions being in the 40-45 s range. With the Virtuoso+, the grind setting I wanted resulted in a 25-35 s extraction. I was also modifying the dose much more with the Virtuoso+, because it’s a stepped grinder. I used dose to mitigate the limitations of the steps being a bit on the large side for best control over the espresso shot. I don’t do that with the DF83 nearly as much.

There seems to be a bit of clarity with the DF83 that I didn’t get with the Virtuoso+, but I’m not sure I could pick the difference out in a blind test.

JahLaza Here’s one person’s experience with ordering from df64coffee.com, although it’s a DF64P grinder instead of the DF83. Looks like the order went through, but the package wasn’t really labeled correctly for customs.

So it seems that it’s possible to save some money through this site, with caveats. I’m in the US, so for me, that would be about $50USD savings on a DF83 compared to ordering from espressooutlet.net, which is the legit US distributor. But I don’t think that it’s worth the stress, the potential hassle, or the questionable customer support should something go wrong, all for the equivalent of 3 bags of beans from my local roaster.

I do understand that my priorities may not be the same as others, but TAANSTAFL certainly applies here.
