With the cup I have problems getting straight into a single flow from the portafilter down to not having an even level of grinds in basket before using a leveller and tamping, I don’t stir the grinds up as use a lot of oily monsooned. It clumps more if I do and no clumps if I don’t. Having tried stirring the usual way it just makes things worse for me as I use a fixed 30sec shot time with this bean. I get more variation in output if I stir. Without it’s fairly constant but would like to do better. Lots come out with the correct taste but some better than others,
So after some playing about straight into the portafilter. ;) So far anyway.
First thing I notice is that the stream of grinds moves as more grinds comes out. It probably takes some time for the burrs to fully load with beans. So move the portafilter around a bit to try and get it even, I’ll sort out a holder at some point as my style of stirring might be ok with a rather uneven heap.
Big heap of grinds with I suspect a lot of air in them. Trying to just tap those down to finish level didn’t work out so a shallow stir with a dissecting needle to even them out which leaves them slightly over lapping the top of the filter basket. Tried tamping directly with the funnel on but pours not too good etc
Tapping them down didn’t always get them level so another shallow stir and then the leveller and tamp. No point in just using the leveller as a 2 slope one will give a tendency for 2 flows out going to one if they aren’t level. 3 wing levellers worse. These may turn to one pretty quickly but ………. not with a 3 wing though. Threw that away some time ago.
Now I start getting 26g out to better than +/-1g regularly. Try a miniscule change in grinder setting and it knocks ~1g off that. Done to check beans. Deliberately did one firm tap down of 3 and that reduced output as well, similar change.
:) Now it gets weird. Taste similar to what I did get from using a higher ratio. The one that I would usually use. Now and again some number close to 30g comes out. I’m not sure why so will try to be more consistent with all stages. Light taps down seem to be better than firmer ones.
Just did one with the stirs under ~2mm deep and 30 came out, Might be a clue. Some of these 30’s have had an unpleasant taste to the crema. This one doesn’t. I had this when I used an overfilled basket. Machine broke and I tried my wife’s Tasimo and several types of coffee for several months and forgot the dose. I’m now using 12.7g in a fully perforated.basket. Over 13g wouldn’t work out. That would probably be correct for many other beans, Monsooded is unusually light just taken to 2nd crack or overdone.
2 shots a day. It will take over a month for me to make my mind up but flows better. I suspect a shot mirror will show a significant improvement. Probably higher extraction due to a more even water flow through the puck.
To do. Recheck Niche output is still as it usually is. Vary stirring and also wonder about the cup and the same style of stirring, I’d usually invert with the cup on rapidly. Maximises compression. Something else to wonder about.
LOL Well you asked. Fixed 30sec shots - I like a challenge. I also want to try using a Sage DB as they intend. Use the volumetrics. So left the OPV set at 10bar. Brew turns out to be 9.5bar with the above so they should work. That comes next at some point. I did get them to work on Barista Express.
