dfk41 David, pretty much summed up by @chlorox above in that I’m not aware of too many 78mm burr sets other than Timemore’s. They may well be about.
The other really important issue though is how “swappable” the burrs are. I know how easy the burrs are to swap with the DF64s that use a coil spring system (like the Niche Zero and Duo or Varia VS3) as opposed to the wave spring in the DF64V and DF83s which to date I have not found as accommodating of burrs that are just a tad thicker than standard.
In short, swapping burrs in a DF64 is easy and fast and the DF64 accommodates a large range of burr sets, probably in excess of a dozen.
With the new Timemores, I don’t know (a) how easy burr swapping is and (b) how many alternative burr sets the 64mm will accept. But even if then 78 makes burr swapping easy, I don’t think there are many options other than the stock burrs.
And to be fair swapping burrs is not for everyone. But I see it as a highly advantageous trend that has emerged with the df range of grinders as well as the new duo. It means that people like me who want to explore can spend anything from $100 to try a different espresso rather than spending multiples of that to buy a whole new grinder.
