dfk41 - no worries. I was specifically talking about the df64v - I hope it’s been designed as a variable speed grinder, rather than just being bolted on as a shiny feature. I don’t know, I never used one or seen one, so I can’t comment. The Niche has been designed as single speed, optimally for the burrs it sports. And there’s nothing wrong with it, as that’s how it has been intended from the ground up.
You never know, may be that one day Niche will want to jump on the band wagon and design a variable speed grinder. That’s fine too.
My point is that he df64v has a variable speed controller, as a feature. And to your point, if I were to buy a grinder that I like (say, for example, a Niche if variable speed was a feature), for a similar price, one with and one without variable speed, I would pick the one with variable speed, just because I can change the speed and see for myself how it affects taste. I might grow tired of it, find the setting I like and just leave it there, but I don’t know, as I never had one. 👍
