simonc Not sure if new ones come with a 2 hole steam tip, if it does then use that first or if it doesn’t then purchase one as I tried the 3 hole standard and couldn’t work with it as I came from a Sage Barista Express which was slow. I’m sure it’ll be fine once you’re used to it and might be easier to get used to the 3 from the start, just practice, practice, practice. Lance I believe uses a Sage/Breville dual boiler which is slower to steam so has more time, like you say.
A trick some use is to put the milk jug in that freezer to help keep the temp down and give you a little more time. I’ve never tried it as thought it might damage my in built thermometer but that’s probably just in my head lol.
