Had the same issue occurring on my machine. The only different bit was that it did not use to do it, which got me thinking.
After scouring the web for posts like these i stumbled on a facebook post from a public group whose author was having the very same issue. It seems ECM, when designing the logic board, implemented a very bizarre? way of saving your settings. As u/Woofy98102 mentions the machine will NOT actually save your settings if you make any changes then immediately shut it off, but for a product costing this much this can’t be where the story ends.
Now this is where it gets interesting, the machine is very much capable of saving your custom settings, you just need to let it hibernate / enter standby once. This is exactly what happened to me, i was fiddling with its settings when i was doing regular maintenance and got distracted. The machine entered standby mode saving my fiddled pre infusion settings and setting me off on this rabbit hole.
tl;dr: Save your settings and let the machine enter hibernation / eco mode / standby or whatever its called (leave it on and alone for 40+ minutes - display will turn off). This will preserve your settings."
