I can’t speak for anyone else but I’m one that’s in the category of having several bags of beans on the go at a time and am happy to discuss it.
In my case, I have a daily driver for milk based drinks which all the ladies in my house are huge fans of (Rave Fudge). I don’t really like that as a straight espresso/black coffee so I have another bag of medium roast for me. Might be anything but last time it was Rave Signature. I then have a bag of decaf available at all times as I like a shot after my evening meal and my brother’s colitis means that’s all he can drink (cworks at the moment but I’ve not been hugely impressed).
Then one or two things might catch my eye and I’ll want to try those, sometimes specifically for pour overs but sometimes just for the fun of trying something out. I rarely buy these types more than once but they can be very enjoyable. I’ve got a couple from django at the moment and I will probably be ordering from that roaster again. I am generally a bit conservative in my tastes so this has been beneficial for me even though some of the funkier stuff can be a struggle.
That’s me up to five different bags, all nestled away in my freezer, without even trying. It’s easy to do. In my use case a very low retention, single dose grinder shows its worth. If I were a one bag at a time sort of chap, I’d be hopper all the way.
