You have a sharp eye. Yes, the grinder is a KafaTek MC3 but with the upgraded Shurikone burrs.
I’m really happy with this grinder and feel it works great with the dark espresso I prefer. I have not tried light roasts. But the Shurikones were designed to broaden the range of roasts for espresso.
In regards to the wood on the paddles, essentially, I allowed Antonio to spec out the machine as he liked best. If I paid an upcharge, I don’t know. I was satisfied with the pricing. I think he wanted to sell a machine in the US and I was the recipient and benefactor of his good work.
